|Following good winter rainfalls the summer delivered gentle sea breezes and warm dry weather. McLaren Vales maritime climate enables the cabernet fruit to ripen slowly due to the cooling of summer sea breezes to produce great flavours, length and structure. The Cabernet was picked in mid March at around 14.0 Baume. Sourced from a vineyard with a 3HA block of ultra-premium Cabernet Sauvignon with roots in ancient free draining limestone soils, three kilometres from Gulf St Vincent. The vineyard was planted in 2000 and it is managed sustainably using organic practices and reclaimed water for deficit irrigation. The fruit is grown with a light canopy to provide full sunlight to ripen the dark thick skinned fruit. The Cabernet block produces very small bunches (75 grams) and berries with intense currant flavours, good acid and ripe grainy tannins.
The fruit was handpicked and sorted before being lightly crushed into 1.5 tonne open vats. A warm natural ferment with wild yeast, regular hand plunging, post fermentation maceration and gentle basket pressing were used to capture the varietal aromas and flavours. The wine was matured in seasoned French oak hogsheads and left on lees for 12 months to allow a natural Malolactic fermentation. 24 months of barrel aging ensued before storage in stainless steel tank. Bottling was conducted in January 2022 with no fining and minimal filtration used.
